Instructions
Step 1
Preheat oven to 180 degrees (fan) and line a couple of baking trays
Step 2
Cream the butter and sugar together for approx. 2-3 minutes until light and fluffy
Step 3
Add the flour and beat together briefly until just combined
Step 4
On a lightly floured surface, roll the dough out to about 5mm thickness
Step 5
Cut the dough using your cookie cutter and place the shapes onto your baking trays
Step 6
Bake in the preheated oven for 8-10 minutes until lightly golden

Leave biscuits to cool on the hot tray for 5 minutes before moving them on to a wire rack to cool completely

Once the biscuits are cool, add a spoon on jam on to a biscuit and spread it out a little but not right to the edges. Sandwich another biscuit on top

Repeat with the remaining biscuits
Step 10
Use a small whisk to mix the icing sugar and milk together to form a spreadable mixture
Step 11
Use the back of a teaspoon to spread the icing on to the top of each biscuit sandwich
Step 12
Top each biscuit with a cherry half or jelly sweet whilst the icing is still wet.
Step 13
Leave icing to set then enjoy!
