Step 1
Preheat your oven to 180°C.
Step 2
Prick your sweet potato all over and put in the preheated oven for 40 minutes.
Step 3
While your potato is baking you can make your delicious tuna topping.
Step 4
First, in a bowl, mash your avocado. Then add your tuna, full fat Greek yoghurt, lime juice and chives. Mix, cover and put in the fridge until your potato is ready.
Step 5
When your potato is fluffy on the inside you are ready to serve.
Step 6
Slice the top of your potato lengthways and pinch to open. Fill with your tuna avonnaise and garnish with chopped chives
