Ingredients

The Chicken
1.5 poundsboneless chicken thighs
cut into pieces
1 tabelspoonshaoxing wine
1 tablespoonsoy sauce
1 tspsalt
2cloves garlic
minced
1 inchginger
knob, minced
75 gramsall purpose flour
60 gramscorn starch
oil for frying
General Tso's Sauce
Instructions
Step 1
Cut chicken into bite sized pieces and place into a large bowl.
Step 2
To the bowl of chicken, add the grated ginger and grated garlic, the Shaoxing wine, and the soy sauce. Toss together until fully mixed and allow to marinate in the fridge for at least one hour.
Step 3
combine the flour and cornstarch in a bowl. Toss the chicken in the flour mixture to thoroughly coat.
Step 4
Fry in batches for about 3-4 minutes until golden brown. Drain on a wire rack, and season the outside with a little salt.
To Make the Sauce
Step 5
whisk the cornstarch and vinegar together to make a slurry.
Step 6
In a wok, or deep frying pan, heat a couple tablespoons of oil. Add the minced ginger, minced garlic, and dried red chili peppers. Cook and vigorously stir over high heat. Once the garlic barely starts to toast, add the Shaoxing wine and cook for about 20 more seconds.
Step 7
Add the Chinese chili flakes, granulated sugar, chicken stock, soy sauce and let that come up to a vigorous boil. Taste and add salt if necessary.
Step 8
Simmer for about 30 seconds, and then slowly stream in the slurry while whisking. Once it thickens, immediately remove from the heat, and toss in the chicken to coat
Step 9
serve over white rice, and top with toasted sesame seeds and thinly sliced green onions.
