Cassava Flan

This recipe can yield 3 medium llanera molds. I just used 1 pack (16 oz) of frozen grated cassava, thaw and halved the cans of coconut milk and condensed, added an egg and that's it! If ready-made cassava is not available, just use fresh, grate it and drain excess juice. Give this recipe a try and let me know what you think by leaving a comment below. Enjoy!
Store leftovers outside, it will last 1-2 days
It can last 3-4 days in the fridge , but it will harden due to the cassava. If stored in fridge, re-steam until warm.

Step 1
Spoon 2 1/2 tbsp sugar in a flan mold or lyanera. (Prepare 3 molds). Caramelize over low heat until sugar turns to light golden brown.

Step 2
Swirl the caramel evenly on the flat side of the mold. Remove from heat and cool completely.
Step 3
In a large bowl, add cassava, coconut milk, condensed milk and egg. Make sure to strain the cassava with a cheese cloth beforehand

Stir until well combined.
Step 5
Pour mixture into molds with caramel. Divide evenly into three molds. Cover each mold TIGHTLY with foil
Step 6
Heat water on a steamer over medium heat. Steam for 45 minutes to 1 hour or until set. Use a toothpick to test if it comes out clean. (Make sure to cover the lid with a cloth to avoid water drips.)
Step 7
Remove from heat and cool completely.
Step 8
To unmold, run a knife around the cassava flan. Place a plate on top of the mold and invert. Tap the bottom of the mold a few times to release the flan. Remove the mold.
Step 9
The top will have some dark dark caramel. You can smooth by scraping with a knife or spatula but that's optional.
Step 10
Slice and serve. Enjoy!
