Quick n' Easy Spinach Puffs!

This is a quick and easy recipe to make and is super duper tasty! This recipe calls for puff pastry - while you're welcome to make your own, I recommend picking up a pre-made from the grocery store.

Instructions

Step 1
Preheat oven to 180 degrees. Line a baking sheet with baking parchment.

Wash the spinach and chop roughly. Peel and mince the garlic.

In a frying pan on medium heat, heat up the olive oil. Once hot, fry the spinach for 3 minutes

Add in the minced garlic and fry until the spinach is wilted and the garlic is fragrant.

Once cooked, place in a bowl and allow to cool for 5 minutes.
Step 6
While the spinach is cooling, separate the egg. Save both the yolk and the whites. Cut the pastry into 6 equal squares and place on the lined baking sheet.

Mix in the egg yolk, grated mozzarella cheese and salt and pepper into the spinach mixture.

Spoon the mixture evenly on each pastry square. Fold two opposite corners into the centre (almost like a canoli).
Step 9
Whisk the egg whites and brush over the tops of the pastries. Sprinkle some of the grated parmesan over each.

Bake in the oven for 20 minutes, or until golden.
Step 11
Once cooked, remove from the baking tray and place on a wire rack to cool.
