400gdark chocolate
1 tspsalt
300glight brown sugar
100gcaster sugar
5eggs
190gplain flour
50gcoco powder
25mlcoffee

Instructions
Step 1
Pre heat oven to gas mark 6, line baking tray with baking paper
Step 2
Melt butter on hob In pan on low
Step 3
Add dark chocolate to the butter
Stir so it does stick to the bottom
Step 4
Measure our desired sugar ratio, stir sugar mixture, make sure pan is on low and gradually add sugar mixture

Add coffee To saucepan, remove saucepan from the heat

In the empty sugar bowl measure out last of the dry ingredients - can be sieved

In a separate bowl crack and mix the eggs
Step 8
Make sure saucepan is warm and not hot, add in eggs, then dry ingredients
Give it a really good mixture

Pour mixture into lined tray

Chop up white chocolate for toppings

Put white chocolate on top of mixture

whack in the oven for 40 minutes
Wait to cool before cutting

Alternative topping - raspberry cheesecake - 250g raspberry - 50 caster sugar
Mix together in a saucepan to make a jam if using frozen raspberries add more sugar - 50g caster sugar - 1 egg
- cream cream 200g ish Mix together in a bowl Marble both on top of the brownie mix instead of white chocolate
