Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Line a large cupcake pan with wrappers.
Step 3
Stir together flour, salt, and baking powder and set aside.
Step 4
Beat the eggs and the sugars together until creamy.
Step 5
Add half of the dry ingredients and beat again.
Step 6
Combine the gelatin with the Apple Cider until dissolved.
Step 7
Add the Apple Cider, butter, vanilla, and cinnamon beat to combine.
Step 8
Add the remaining dry ingredients and beat just until combined.
Step 9
Mix in the baking soda.
Step 10
Dice an apple and fold in to batter. (optional)
Step 11
Divide the batter between the cupcake pan.
Step 12
Bake cupcakes for 18 minutes and cake for 30 until its very lightly browned and a toothpick inserted in the center comes out clean.
Step 13
Remove and let cool at least 30 minutes, before inverting onto a wire rack to finish cooling.
Step 14
Frost as desired.
