Welcome, Little Mary Sunshine! This vinaigrette is light and bright, perfect for when you're looking for a dressing that allows a salad's ingredients to come through while adding just the right high note. Cilantro, with its high magnesium and iron content, offers a nice brain boost. In this book, I've paired it with the watercress and purple cabbage salad and the forbidden rice salad.
