This is a super easy microwave cookie, delish! Gluten-free, too!

Ingredients

1 ½ Tbspavocado oil
or any oil or melted butter/coconut oil
25gno-calorie sweetener
or any type
¼ tspvanilla extract
10gmilk
any type
55ggluten-free flour mix
spoon and leveled, 1/3 cup + 1/2 tbsp, I use one that is 2 parts white rice flour and 1 part potato starch and 1 part tapioca flour but you can use any flour
⅛ tspbaking soda
⅛ tspsalt
Instructions
Step 1
Melt the butter, and add the milk, sugar, and vanilla. Stir.
Step 2
Stir the dry ingredients together in another bowl, and stir those two together.
Step 3
Form into a 3-3.5 in. cookie, and press onto a piece of parchment paper. Microwave starting with 45 seconds, then check. It should be soft but not raw.
Step 4
Let cool, and dig in!
