A healthier twist to an old favourite. I love hash browns, but I love them even more when I know they are full of protein and nutrition. These sweet potato hash browns will soon become a favourite in any household!

Instructions
Step 1
In a large bowl, mix together sweet potato, tofu, spring onion, coriander, cumin, cornflour, salt and pepper until well combined. You may need to add in a little plant based milk. Form into 6 patties.
Step 2
Heat oil in a large non-stick frypan over medium-high heat. Cook patties for 3-4 minutes per side, pressing down with a spatula as they cook, until cooked and golden on both sides.
Step 3
Divide hash browns between two plates and serve with garnishes.
