1 cupspinach
chopped
1 cupcarrots
diced
½ cupyellow onion
diced
1 cupcelery
diced
32 ozChicken broth low sodium
32 ozvegetable broth low sodium
2 cupswater
2 Table Spoonsgarlic
2 table spoonsbutter
softened
1 table spoonflour
1 table spooncorn starch
10.5 ozcan cream of chicken & mushroom soup
salt
pepper
paprika
rosemary
oregano
2 tbavocado oil
1 cupwild rice
Instructions
Step 1
In a pot cook chicken in avocado oil and season with salt, pepper, and paprika. Next remove chicken and set to the side to cook and then shred.
Step 2
In the same pot add in vegetables (except spinach) and sauté. You may need to add in a bit more oil. Once these are tender and translucent, add in broths and water. Start to season to taster. Add in shredded chicken. Bring to a slow boil. Mix softened butter with corn starch and flour. Then drop this into the bowl.
Step 3
Once boiling, add in rice and let slow boil for about 20-30 minutes. Then lower heat to a simmer and then add in spinach. Keep simmering for another 15 minutes.
