Orange blend: Butternut Squash-Apple base blend

From Missy Chase Lapine's "Sneaky Blends" cookbook. This will be helpful for other recipes from her book, which will be added to this Sneaky Veggie community. "I lean on frozen squash to save time but you can also buy the already peeled and diced kind you'll find in the produce section of most supermarkets and steam it for 15 minutes or so. If you have a little more time and want to deepen the flavor of the squash, prick a fresh butternut squash all over and bake it like a potato at 350 degrees for about 45 minutes, until soft. Allow it to cool slightly, then cut the squash in half lengthwise, remove the seeds, scoop out the flesh, and cube it."

Instructions

Step 1
Place the squash in a large, heatproof bowl and pour boiling water over it to thaw it; drain. Puree the squash and apples along with 2-3 tablespoons of filtered water until smooth, adding more water as necessary.
