Instructions

Step 1
Preheat the oven to 170°C (fan 150°C/gas mark 3).
Step 2
Cut the carrots, parsnips and sweet potato into thin strips, about 5mm wide.
Step 3
Spread evenly onto a large baking tray lined with baking parchment and spray with low-calorie cooking spray
Step 4
In a small bowl, mix the finely grated Parmesan with the finely chopped fresh rosemary.
Step 5
You could use the same amount of dried rosemary too, but fresh is more fragrant and has a better flavour.
Step 6
Sprinkle the cheese and herb mix over the chips and turn them to ensure an even coating.
Step 7
Place in the oven for 35 minutes or until golden.
Step 8
Check the chips after 25 minutes to make sure they're not beginning to burn on the edges.
Step 9
Remove from the oven, sprinkle with salt as required and leave for 5 minutes before serving, as they will crisp up.
