Ingredients
4 servings
2 Tbsbalsamic vinegar
6 Tbsolive oil
1 ½ tspdijon mustard
1garlic clove
salt
pepper
1tomato
large, cut into 1/2 inch cubes
3scallions
green parts only, chopped
½ cupmozzarella pearls
2eggs
large
1 cupdried bread crumbs
¼ cupgrated parmesan cheese
4 x 4 ozchicken breast cutlets
thin sliced
cooking spray
3 cupbaby arugula
Instructions
Step 1
In a medium bowl, whisk together the vinegar, olive oil, mustard, garlic, salt and pepper to taste. Add the tomato, scallions and mozzarella pears. Stir to combine. Refrigerate.
Step 2
Whisk eggs in a shallow bowl, In a shallow dish combine bread crumbs, salt, pepper and parmesan cheese.
Step 3
Drag chicken through the egg, the coat with bread crumbs.
Step 4
Preheat air fryer to 400. You will need to cook chicken in 2 batches. Spray 2 of the cutlets all over with cooking spray and place in air fryer. Cook for 10 minutes, flip and spray cooking spray again, cook for 10 more minutes. Remove to plate, cover with foil and cook remainder of chicken.
Step 5
While chicken is cooking, add arugula to tomato mixture. Coat evenly..
Place chicken on plate and mound with salad.
