1. Line the bottom of a 9 inch springform pan with parchment paper

2. Add the Oreo cookies into a blender or food processor and blend the cookies till they are small crumbs

3. Add the melted butter to the cookie crumbs and pulse till combined

4. Pour the cookie crumbs into the springform pan and pack the crumbs into the base and up the sides with the 1/2 cup measuring cup

5. Place the crust in the freezer while you make the filling

Cheesecake Filling

1. Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the cream cheese, sugar and salt until smooth and creamy.

2. Make sure there are no lumps and scrape down the sides of the bowl as needed.

3. Add the the sour cream and lemon juice and mix again. Set aside.

4. Using a hand mixer or stand mixer with the whisk attachment, whip the cold heavy cream and vanilla into stiff peaks.

5. Fold the whipped cream into the cream cheese mixture until fully combined

6. Grab the crust out of the freezer and pour the cheesecake filling into the pan

7. Using an offset spatula, smooth the filling into the crust and smooth the top
Step 15
8. Tightly cover with plastic wrap and refrigerate overnight or for at least 8 hours to allow the cheesecake to set.

9. Decorate with fresh fruit and/or fruit sauces and enjoy!
