Instructions
Step 1
Add the cream cheese and condensed milk to your stand mixer begin whisking. Add the vanilla extract and lemon juice to the mixture and mix only until smooth.
Step 2
For the crust, blend 12 lemon Oreos until finely crushed before transferring to a bowl. Slowly add the melted butter and mix until it is firm and moist. It should resemble wet sand.
Step 3
Combine strawberries and sugar in a small saucepan on the stove. Cook on low for about 10-12 mins, stirring occasionally. Once reduced, add lemon zest and let cool in the fridge, before blending into a smooth sauce.
Step 4
Line a cupcake tray with liners and begin by scooping an even amount of the crust on the bottom of each liner. Place the cheesecake mixture on top. Swirl the strawberry compote into the top of each cheesecake mixture before you chill it.
Step 5
Chill and set in the fridge for 3-5 hours or until the wrappers come off easily. You can place them in the freezer if needed.
Step 6
Top with whipped cream, Oreos, and enjoy!
