Instructions

Broccoli bread

Step 1
Cook the broccoli for about 2min until soften. Then cut it into small pieces.
Step 2
To a bowl add all the ingredients and mix until well combined. If the eggs are very large, you need to add a little more oats.
Step 3
Cover the contact grill with baking paper. Spread the broccoli dough on it and cover it with baking paper. Bake the bread for about 2-3 minutes until it is firm.

Sandwich

Step 4
Meanwhile slice the mozzarella and tomato.
Step 5
Cover half of the broccoli bread with tomato, mozzarella and arugula. Divide the bread in half and place the uncovered half on top of the covered one. Toast the bread for 1-2 more minutes until the cheese is melted.
