Marzipan, which is originally made with almonds (but I use cashew nuts), is an ingredient in many Christmas and Easter recipes and is very simple to make at home. Marzipan sweets are made with coloured marzipan and rubber moulds, or you can make marzipan fruits, which are then used to cover traditional Christmas fruit cake. During the Easter season, marzipan is also used to make Easter eggs. This is the fundamental recipe for Marzipan

Instructions

Step 1
In a grinder jar, add the cashew nuts and granulated sugar and grind.
Step 2
Sieve the cashew nut and sugar powder mixture through a sieve.
Step 3
Take a pot, add beaten egg white and mix in nut and sugar powder , rose water or almond essence. This should be done using the double boiler method
Step 4
Stir mixture continuously. Let it cook for few minutes till mixture comes together.
Step 5
Transfer the mixture to a marble slab or a wide plate and quickly knead to smooth dough, otherwise the mixture will turn hard. Cover this marzipan in a cling film if not using right away.
Step 6
Use this marzipan to cover cakes or make colorful marzipan fruits.
