Instructions

For the Pesto

Step 1
Arrange Cucumber, Radish, and avocado in a bowl. Sprinkle with salt and pepper, and squeeze lime juice over the avocado.
Step 2
***Remove the skin from the cucumber if you prefer***
Step 3
Combine parsley, Pistachios, Lime Zest, Lime Juice and Olive Oil add salt and pepper to taste. Dollop pesto over vegetables
