Step 1
Blend the cocoa and milk over low heat, stirring constantly. Add the sugar, salt, cream of tartar and corn syrup, stir until mixture boils. Cook to a softball when tested in cold water or 232°F, using candy thermometer. Remove from fire, add butter and vanilla. Cool mixture to lukewarm and then beet for approximately 10 minutes until mixture thickens.
