Instructions
Step 1
Boil lg. pot of water; add generous amount of salt, then macaroni. Cook until still underdone.
Preheat oven to 400°F
Step 2
Butter 6 ramekins. ; line sheet tray (large enough to hold ramekins) with aluminum foil.
Step 3
While noodles cook, heat butter over med.-low. Add shallots; cook (5 min.) until soft & translucent.
Step 4
Add flour & stir constantly (1 min.); increase heat to med.-high and pour in milk & cream. Simmer, reduce heat, & add cream cheese, cheddar & colby jack.
Step 5
Once the cheese has melted, add hot sauce & mustard; season with salt & pepper. Add drained noodles, stir, and evenly distribute into the 6 prepared ramekins. Place ramekins on foil-lined sheet pan.
Step 6
Grate fresh Romano over top; bake (15-20 min.) until cheese is golden brown & bubbly.
