Coconut Mai-Jito (courtesy of Trader Vic’s)

This drink checks all the boxes, creamy, tart, sweet, and refreshing. It is so balanced you’ll end up drinking an entire bottle of rum before you even realize it. Go pick up Trader Vic’s Mai Tai Mix (they’re the creators of the original Mai Tai in case you didn’t know)or order it online and level up your cocktails!

Instructions

Step 1
1.) Fill your cocktail shaker with ice.
Step 2
2.) Add 1 oz light rum (I used Bacardi), 2.5 oz of Trader Vic’s Original Mai Tai Mix, 1.5 tbsp of cream of coconut (Coco Lopez is my favorite brand especially for cocktail recipes), and the juice from one fresh lime.
Step 3
3.) Wash and pick off 6 to 8 mint leaves and rip them into pieces before adding them in your cocktail shaker.
Step 4
4.) Cover and SHAKE THE SHIT OUT OF IT. Pro-tip from a martini expert…count 20 shakes before removing the lid and pouring over ice. This will ensure your liquid is the coldest possible and quite literally it’ll have almost an icy layer resting on the top of your glass. 🤤 who doesn’t want that!?!?
Step 5
5.) Pour over ice into a low ball/ cocktail type glass. Float 1 oz of dark rum on top. Slowly pouring it over the back of a spoon will allow it to sit at the top (and it’ll make your drink look prettier).
Step 6
6.) Garnish with a lime wheel and mint sprig. Stick the sprig right into the middle of the lime slice. It’ll float right on top like a little tropical island in your drink. 🏝
