3 poundsBeef shoulder roast
Certified Angus, cut into 2-inch cubes
1 ½ teaspoonskosher salt
1 teaspoonblack pepper
1 Tbspdried thyme
2 teaspoonscanola oil
1onion
large, sliced
3 clovesgarlic
minced/crushed
3 cupslow-sodium beef broth
¼ cupbalsamic vinegar
2 packagesrolls
look for hawaiian rolls, 12 per pack
12slices provolone cheese
½ tspred pepper flakes
2 Tbspcornstarch
2 tablespoonsbutter
melted
coarse salt

Instructions
Step 1
Cut roast into 2" cubes. Pat cubes dry. Season shoulder roast cubes generously with salt and pepper on all sides while heating oil in Instant Pot set to Sauté.
Step 2
Brown roast cubes on two sides (about 3-4 minutes). Add onion and garlic and sauté; stirring occasionally for 2-3 minutes. Add beef broth, balsamic vinegar, and thyme, secure lid and set to high pressure for 45 minutes. Allow a natural release for 10-15 to keep meat tender.
Step 3
Prepare rolls by cutting each group of 12 horizontally to create a top and bottom layer. Place both bottom layers on a baking sheet and shingle 6 slices of cheese on each.
Step 4
After 15 min natural release remove lid. Remove cooked roast cubes and place in a bowl to cool for 15 minutes. Preheat oven to 325°F
Step 5
Remove onions from cooking liquid. Add pepper flakes to liquid. Set Instant Pot to Sauté to reduce cooking liquid. Remove 1/2 liquid and add 2 Tbsp cornstarch and whisk vigorously. Add mixture back to cooking liquid and continue to reduce and stir until thickened into a nice Jus. About 10 to 15 min.
Step 6
Shred roast cubes and spread evenly over top the cheese on each group of rolls. Place the top layer atop the shredded beef. Brush roll tops with melted butter and sprinkle the center of each bun with a pinch of coarse salt.
Step 7
Bake 15 minutes and serve with jus. Pull sliders apart or cut and serve separately.
