Espresso Martini S’mores Brownie Skillet

Step 1
1. In a microwave safe bowl, combine the chocolate chips and Kahlua. Microwave for 30 seconds, then stir until combined. Microwave an additional 15-30 if necessary. Pour into a foil or freezer safe container and put in the freezer to set. Or, place in the fridge overnight.

2. Preheat the grill to the temperature written on the brownie box. Mine was 375F.

3. In a bowl, combine the brownie mix and ground espresso. Whisk until combined. Add the eggs and vegetable oil and stir until a soft dough is formed - should be softer than cookie dough and firmer than brownie batter.

4. Coat an 8-inch cast iron skillet with oil. Place the brownie dough into the skillet in a single layer, creating a small well in the center. Remove the Kahlua ganache from the fridge or freezer. Scoop the ganache into the center of the brownie. As best as you can, fold the edges of the brownie dough around the ganache and then flatten the edges. Top the brownie with any remaining ganache. Add a handful of marshmallows. Bake 25 minutes, or according to the package. Let it sit 15-20 minutes before serving. Crumble graham crackers on top and serve with graham crackers for dipping!
