1/2 cup cocoa powder
2 oz bittersweet chocolate
Instructions
Step 1
Preheat oven to 375 F
Step 2
In food processor combine sweet potato, flour, cocoa with 1 cup of the sugar & 1/8 tsp salt
Pulse until smooth
Step 3
Separate eggs
Step 4
Add the 3 yolks to food processor & pulse Transfer to bowl
Step 5
Beat egg whites on high speed until soft peaks form
Add 1/2 c sugar & beat until stiff & glossy peaks
Step 6
Fold half of egg whites into sweet potato mixture & then add rest
Step 7
Pour into greased 9” springform pan & bake 45 minutes or until toothpick comes out clean
Step 8
Cool 10 minutes then remove side of pan
Cool completely
Step 9
Melt chocolate & stir in milk
Step 10
Spread over top of cake & let chocolate set
