Crockpot Ham with Apple Cider

Instructions
Step 1
Place ham cut side down in a large crock pot. Trim the ham a bit if you have trouble fitting it in, adding those pieces around the ham. Remember that there's a bone, so you can't just cut it any old way you want.
Step 2
Mix the cider, brown sugar, honey, and mustard together in a small bowl. Stir well and then pour over the ham.
Step 3
Cook on slow for about 4 1/2 hours (depending on the size of your ham and your cooker, it may take 3-5 hours). You're good to go when an instant thermometer not touching the bone hits at least 140 degrees.
Step 4
Allow the ham to rest (1/2 hour is good).
Step 5
Meanwhile, pour the cooking juices into a saucepan and bring to a boil. Mix the cornstarch with an equal amount of water, stir to mix, then add to the saucepan and reduce to a simmer, allowing the sauce to thicken. You can add more cornstarch and water as needed to get to your desired consistency.
Step 6
Serve the ham with sauce on the side. Rice and roasted sweet potatoes make good side dishes.
