Crust
Step 1
Mix sugar and zest in a large bowl. Add oil and water stirring until sugar is mostly dissolved.
Step 2
Sift in flour and baking powder.
Step 3
Fold gently until everything is moist. Press into pie dish or roll out on floured surface.
Step 4
Poke bottom with a fork and blind bake @ 350 for 15 to 18 minutes.
Custard
Step 5
Combine dry custard ingredients in a medium pot.
Step 6
Add milk and citrus juice slowly while stirring to dissolve cornstarch.
Step 7
Stir over medium heat until thick.
Step 8
Cool custard somewhat, stirring occasionally.
Finishing
Step 9
Pour custard into crust, top with decorative fruit.
Step 10
Heat jelly in microwave for 30 seconds, stir, heat 30 seconds, stir.
Step 11
Cool jelly for a minute and then pour and spread over fruit.
