Apple Ginger Peach MOCKTAIL

After testing this mocktail, I was pleasantly surprised at just how amazing apple, ginger, and peach are together. I’m a fan of quick, easy mocktails, and this version tops my list! In all of ten minutes (or less), you simply muddle the peaches and a few of the apple slices until they are majorly broken down. Then you add lemon juice, mix in a sweetener such as agave, and top these beauties with ginger beer. I love the strong ginger flavor that natural ginger beer adds; therefore, it’s my go-to! However, you can change it up by adding a ginger-blood orange beer (yes, that exists) or another fizzy alternative

Ingredients
2 servings
3peaches
medium, thinly sliced
1granny smith apple
sliced
½ cuplemon juice
freshly squeezed
¼ cupagave syrup
ice
crushed, for serving
ginger beer
for topping
Fresh rosemary sprigs
for garnish, optional
Instructions
Step 1
1. Place most of the peach and apple slices in a pitcher, reserving the rest for garnish. Add the lemon juice and lightly crush everything using the back of a wooden spoon until the fruits are mostly broken down and the mixture becomes a little thick and mushy-looking. Add the agave and stir until combined.
Step 2
2. To serve, fill two 8-ounce glasses halfway with ice and spoon the muddled fruit mixture over the ice. Top with ginger beer until the glasses are three-quarters filled. Garnish with the reserved peach and apple slices and, if desired, rosemary sprigs.
