Instructions
Step 1
Pre-heat oven to 180°C (356°F).
Step 2
In a medium bowl, mix together the flour, Stevia and baking soda.

Fold in the applesauce, peppermint extract, vanilla extract and oil until fully combined. Then fold in the chocolate chips.
Step 4
Crush ¼ of a candy cane until very fine.
Step 5
Scoop the batter in three balls, roll in the crushed candy cane and place onto a prepared baking tray. Bake for 8 minutes.
Step 6
Let the cookies cool on the tray for 5 minutes before transferring to a cooling rack to cool completely.
