Instructions
Step 1
Preheat the oven to 220°C. Line a baking tray with greaseproof paper.
Step 2
Arrange the mushrooms on the baking tray. Scatter with chilli and two-thirds of the garlic. Season with salt and drizzle with 2 tablespoons olive oil. Toss to coat.
Step 3
Roast for 15-18 minutes, tossing halfway, until the mushrooms are tender.
Step 4
Meanwhile combine the quinoa and stock in a saucepan.
Step 5
Bring to a boil over medium-high heat, then decrease heat to maintain a gentle simmer. Cook for 15-20 minutes until the quinoa absorbs all of the liquid.
Step 6
Remove the pan from the heat, cover and let the quinoa steam for 5 minutes. Then remove the lid and fluff the quinoa with a fork. Add the remaining garlic and olive oil and season with salt and pepper. Add lemon juice and stir to combine.
Step 7
Serve the mushrooms with the quinoa, and top with fresh coriander leaves.
