Instructions

Step 1
Add potatoes, water, and a generous pinch of salt to an instant pot.
Step 2
Place lid on Instant Pot and and set to manual, high, and set time for 12 minutes.
Step 3
When finished, turn valve to quick release.
Step 4
Drain any remaining liquid and transfer potatoes to a large bowl.
Step 5
Use a potato masher to mash until smooth.
Step 6
Meanwhile, in a small pot over medium heat, melt butter with milk until warm.
Step 7
Pour over mashed potatoes and stir until creamy.
Step 8
Stir in sour cream and season with salt and pepper.
Step 9
Transfer potatoes to a serving bowl and top with a pat of butter.
Step 10
Season with more pepper.
