Instructions
1. Mixing Bowl
Step 1
Line a baking sheet with parchment.
Step 2
Beat confectioners' sugar, peanut butter, butter, vanilla, and salt with an electric mixer/stand mixer until well combined.
Step 3
Scoop 2 teaspoon mounds and roll into balls; arrange them on the prepared baking sheet
Step 4
Refrigerate until firm, about 20 minutes.
2. The Dip
Step 5
Microwave the chocolate and coconut oil in a microwave-safe medium-sized bowl for 30-second increments, stirring in between, until the mixture is completely melted and smooth.
Step 6
Stick a toothpick into the top center of a peanut butter ball
Step 7
Dip the ball into the melted chocolate, leaving a circle of peanut butter visible on top.
Step 8
Let the excess chocolate drip off, then return the buckeye to the baking sheet
Step 9
Repeat with the remaining PB balls and chocolate.
3. Let It Chill
Step 10
Chill the buckeyes until firm, about 30 minutes.
Step 11
Smooth out the hole left by the toothpick with an offset spatula.
Step 12
Serve @ room temperature or well-chilled.
