Hello! This is just my thoughts, but 5 ounces of tofu only contains about 15g of protein, which among three servings would yield five grams per serving. So I think you could omit it and you wouldn't lose too much of the total protein content. Maybe swap in another protein? Or serve it as a side to a main protein dish. Or just say to heck with it and enjoy it however you want, "high-protein" or no! :) hope this helps or inspires

Yes, you can substitute with chickpeas instead to be sure you're getting the thickness the tofu adds to the sauce. May need to add some water or broth to loosen the sauce a little though. You could likely also add a non-dairy Ricotta as well.

Oh that’s hard on this one, since it’s part of the sauce. Maybe you can try tahini instead but you’d lose some of the thickness I think
