I've never tried freezing something like this and I'm curious if anyone has, how did it thaw? Also would this work with bulgur (couldn't find brown rice)?
I wouldn’t thaw it, I’d put it directly in the oven at 350° for about 20-30 minutes. You’ll need a thermometer to ensure the middle gets cooked, other than that you should be fine.

Yes! It freezes and reheats well!
I let it thaw overnight in the fridge then remove it from the fridge and let it come close to room temp before covering it with foil and reheating it in a 350 oven til it reaches 135 internally. Probably about 20 minutes. Then remove the foil and reheat it a few more minutes.
I'm not sure how it will reheat with bulgur wheat.
