I'm not sure what you are referring to with China's noodles. The noodles used in the Chicken Yaki Udon are actually Udon noodles which are Japanese, not Chinese. They are thick noodles made from whole wheat. If you live close to an Asian grocer, they come pre-packaged and easy to prepare. I've never seen them made from scratch but I don't make any fresh pasta personally.
