I have been eating less meat lately - does anybody have a recommendation for a meal that is healthy but also filling and easy to make?

roasted zucchini sandwiches. i eat them open faced. thinly slice zucchini lengthwise, spray with oil and sprinkle with salt and italian seasoning, roast at 425 for 10 minutes (oven or air fryer), when they are browned toss them in a tbsp of vinegar, a tbsp of olive oil and a teaspoon of minced garlic. toast baguette brushed or sprayed with olive oil, top with zucchini, cover with marinara of your choice and mozz and put back in over or air fryer until cheese is melted and bubbly. you can use the extra vinegar/olive oil dressing over some tomatoes.

This is a great alternative to spaghetti with meat sauce. Healthier, yummy, and just as fast to whip up!

While Sunny's recipe sounds super easy and delicious, I don't know that I'd call it filling-- especially for someone looking into a more plant-based diet. I would recommend you start with recipes based around hearty, plant-protein rich ingredients like beans, lentils, and chickpeas. If you're feeling adventurous, you could also try baking crispy tofu & including it in a salad or Buddha bowl! When I first made the switch to vegetarian, this lentil shepherd's pie became my go-to. It takes a bit more time so try it on a weekend. I'll also attach a second recipe below that takes a bit less time and is just as delicious and easy! Good luck on your plant based journey!
