An 8.3 is high that is healthy. Scores are based on the amount of "good" nutrients to the amount of "bad" in them. If you hit the icon next to the score it goes into more detail about it.

As mentioned, an 8.3 is a great score. But if you’re wondering why this didn’t score above a 9, it’s likely because it’s a relatively simple dish that doesn’t have a diverse range of nutrients represented.

It also seems that when there's a higher fat content it gives it a lower score, even if the "good" essential fats are the main fats. A lot of nutrition calculators tend to do this, with some lowering the score for any fats
