Vegetarian quick meals

As a vegetarian, getting enough protein is a daily struggle. I can't seem to find quick vegetarian meals with a decent amount of protein. I'm beginning to think they don't exist. If they're quick they're usually not healthy or lack protein. If they have protein, they take hours to prepare. Any ideas on genuinely quick, healthy and tasty veggie meals?

This is technically a dip, but I eat it as a small meal 😂 lentils are great for protein - so you could swap out rice for lentils on your usual dishes, or do a lentil curry with fish!

I would totally recommend finding a Vegetarian or Vegan community here on Whisk! I’m not sure if they have one specifically for 30-minute vegetarian/vegan meals, but they definitely have lots of recipe ideas!!

Aren't beans popular for having protein as well as fiber? You could also try getting vegan meats, or get stuff that vegan meats are generally made of such as Faba beans and red Seaweed sushi as the kind used to wrap sushi roles.
