I also cooked my first turkey in my late 40's. It was way easier than I had built up in my head...really no different than roasting a chicken. Here is a simple recipe. You don't need to put the stuffing in the turkey - you can make it separately. This is really a personal preference. I also agree with Dana that making sure it is fully thawed out is the #1 criteria.

This is my favorite turkey recipe - it’s a little less photogenic (doesn’t have the whole turkey look) but it cooks the turkey much more evenly and makes it all crispy and tender!!! Lots of great instruction on how to do it. The most important thing for any recipe is make sure you begin defrosting your turkey early!! For me that’s always the riskiest part!

I started grilling my turkey last year using this recipe, and it massively reduces the cook time to do it this way. Frees you up to focus on all the other dishes you're preparing day of.

Definitely a fresh turkey using pioneer woman’s brine recipe. Delish. Can’t do it this Thanksgiving, wife got a butterball but I still plan on spatchcocking that sucker to make it easier and more crispy skin.

Pioneer Women Apple Cider Turkey Brine Recipe 3 cups apple juice or apple cider 2 gallons cold water 4 Tablespoons fresh rosemary leaves 5 cloves are garlic minced, I didn't use but go for it. 1 1/2 cup kosher salt 2 cups brown sugar 3 Tablespoons peppercorns 5 whole bay leaves peel from three large oranges Cool before placing turkey in it and chill overnight. Rinse thoroughly and roast. Don’t use leftovers for gravy as it’s salty. But dang this is SO good.

16-24 hours brine time. One year it was so cold I stuck it out on the porch overnight lol. Best turkey ever.
