Method
1. Prep the veg by dicing the onion and garlic, and chopping the pepper into small pieces.
2. In a large pan heat the olive oil for a few mins and then add in the diced onion.
3. Soften for a few mins on medium heat and then add in the garlic and red pepper.
4. Stir round and fry for another few mins before turning the heat up to high and adding the minced beef.
5. Break that apart in the pan and then sprinkle over all of the seasonings.
6. Continue to break that apart and stir around to fry the beef until fully cooked through which should take around 6-8 mins.
7. Then pour in both tins of chopped tomatoes, followed by the beef stock made up of the oxo cube and boiling water.
8. Stir that round and turn the heat down to medium, simmering for around 20 mins. Stir frequently so it doesn’t stick to the bottom of the pan.
9. In the mean time drain and rinse the kidney beans and once the 20 mins is up, pour into the pan.
10. Stir round and simmer for a further 5 mins before serving into four equal portions.
11. Add 30g of lightly salted tortilla chips and 30g of reduced fat sour cream onto each portion.
12. Garnish each portion with freshly chopped coriander (I forgot to take a picture of this)
