What should I do with lots of fresh strawberries?

I have so many I don't want them to go bad! Ideally want to make some healthy things with them.

During summer we always just blend strawberries with sugar, put in the jars and freeze them. Then in winter take a jar out, put in the warm water to thaw and eat with pancakes :) Here's one of the recent batches

I suggest freezing them and making healthy smoothies afterwards. One of my favorite ones is with orange and banana, fresh and creamy!

I also just realized my suggestions are not entirely whole food or plant based - so my OTHER suggestion is when you cut your strawberries to have raw, save the strawberry tops and use them in a pitcher of water! It feels like spa water and tastes fresh!

My absolute FAVORITE THING is this strawberry cake from smitten kitchen. I’ve told so many people about it and they love it too - it’s fast, simple ingredients and so so tasty. I can eat the whole thing myself 😬

But also a random tip from strawberries I learned somewhere - dip them in sour cream and then brown sugar!
