This was seriously so yummy! And kid friendly! I have a picky 4 year old and 2 year old who don't really like pasta, but they both ate this no problem! Instead of canned tomatoes, I used a fresh tomato and cooked it at the same time as the zucchini. When it came time for the zucchini and tomato to simmer, I added about a ¼ of a cup of water to the pan and it worked perfectly!
