Instructions
Step 1
Boil water for your pasta and cook according to package instructions.
Step 2
Slice zucchini and mince garlic. Pan fry your zucchini sliced until tender and then add in your garlic. Cook until browned and fragrant. Add in your canned tomatoes and simmer until bubbling, about 3 minutes.
Step 3
Toss ingredients from your pan to your food processor or high powered blender along with ALL the rest of the ingredients above from the coconut milk to the salt and pepper.
Step 4
Blend on high for 2 minutes until smooth.
Step 5
Add more salt, pepper, and paprika to taste.
Step 6
Pour sauce over cooked pasta and garnish with fresh basil. Enjoy!

I added tomato pure, chilli and paprika powder plus tarragon as it was super bland without it

It was soo easy but I recommend adding more tomatoes than it calls for just to give it more taste..😄
I added a little less salt and I used heavy cream, but very good way to get those veggies in.

Fairly bland tasting. Had to add chilly a lot of herbs to get it to have significant/distinct taste.
