Very tasty! I thoroughly enjoyed this pancake! The best pancake I've ever made and eaten! Not too sweet but sweet enough. Moist. Lemony. Can even eat without toppings but vegan butter (Earth Balance) and maple syrup really brings out the flavor. I didn't have lemon extract so I used vanilla flavoring, works quite well.
