This was a great dinner! Would rate it a 9 out of 10. I added some Knorr Chicken boullion to give it a rich chicken flavor. Also added some cayenne pepper for some spicy heat. The only liquid the recipe had me add was the can of diced tomatoes but I still ended up with a lot of thin liquid so I added some corn starch at the end to thicken it up nicely. Great dish where many diff veggies could be added. Recommend adding sour cream dollop on top after plating. Recipe suggested cooking chicken on one side of the pan while trying not to overcook some veggies on other side - I assume this is to call it a one dish dinner but next time I would prefer just to set aside the cooked veggies in a bowl until after the chicken is cooked. I felt like it was a healthy dinner because of all the fresh veggies. Be sure and use a very large pan like the recipe recommends! We used our largest pan and still had some trouble mixing all the ingredients because of how full it was.
