Overall I do enjoy this take on an avocado toast. I made half the recipe and that yielded 8oz which is the perfect amount for having in the fridge. Topped my toast with cherry tomatoes and some hemp seeds and all the flavors paired together nicely.
The texture of just the spread is similar to that of egg yolk from a hard boiled egg. I did press the tofu before blending it so that could be why it has a somewhat dryer texture. It is still creamy though and easy to spread.
Some notes:
-Added 2 tbsp of lemon juice
-Added 2 tbsp of nutritional yeast
-Manually blended in my ninja first on level 2 and then a few more times on level 6 until nice and smooth.
I’ll be making this again. For those with kiddos that like Avo toast, this is a good way to sneak in some protein since the tofu taste doesn’t come through at all.
