You have to turn the heat WAY down for the rice, I'm guessing bc of the coconut milk. I usually keep rice going at a pretty good simmer and it's always fine. Ended up with a very burnt bottom at about 13 mins into the recommended 20 mins. It ended up fine and the smoky flavor is actually pleasant so I didn't redo the rice. The fish and salsa compliment each other very well. I also marinaded my fish overnight so the lime flavor is pretty present. Looking forward to trying again and not burning the rice so I get the actual flavor combinations but for a first time cooking with coconut milk, I can't complain :)
