I think it's the oregano, but I generally like oregano so it seems odd, but there's a taste here I really didn't care for. This was also too time consuming for a midweek side dish.

I’d bet it’s the thyme. I usually half the amounts in recipes because thyme has a strong slightly bitter flavor of there is too much and 1 tsp is way too much for our household.
