This became a staple in my family, since it satisfies all our needs (a mix of diabetic and vegetarian people). It's harty, fresh, excellent as a side or on it's own. I throw in whatever fresh veggies and cheeses i have but the quality of the tomatoes makes this.
My vegetarian husband will have a double serving with wraps or fresh bread while i, diabetic, serve it as a side for fish, pork or chicken.
Ps if there are leftovers, it saves well for next day's lunch - excellent straight from the fridge
