I just made this, the two kinds of tomatos have very different flavors. So it’s not redundant to have both. But you’re right, you can definitely do just one or the other if you double up!

They give very different flavours due to sugars in them. Roasting is very different to sun dried, taste one of each on its own and taste the difference
